Vialone Nano is an extremely popular variety in Italy, considered to be the perfect choice for a creamy risotto, thanks to its high starch content. It is grown and processed for Natoora at the Melotti farm near Verona, in Northern Italy, following traditional methods; from planting to harvesting, and finally mechanically milling to remove the husks, without the addition of any chemicals, to get its characteristic, delicate ivory colour, intense flavour and perfume.
