There are two versions of the origin of this shape's name: the first one refers to a pasta maker who drew his inspiration from the long and wavy hair of a young lady named Mafalda. The second version is the most reliable: the name of this shape is in honor of the Queen Mafalda di Savoia (in fact this pasta is also called “reginette”, “little queen").
