The Felicetti Family's Pasta, Crafted in the Italian Alps From Specially Selected Durum Wheat Semolina & Alpine Spring Water
'I’m not sure a week has ever gone by without my reaching for a packet of orzo pasta. ‘Orzo’ means barley in Italian, and ‘Risoni’ big rice, or really large rice grains, so depending on whether you feel this pasta shape resembles rice or barley, you can call it by either one or the other! I add it to meatballs while they’re simmering in a tomato sauce to make a one-pot meal, to chicken braising or poaching in the oven with leeks and carrots, and create a kind of no-stir pasta risotto with pancetta and peas – and so much more. It’s particularly useful for helping you eke out leftovers: if I have only a small amount of stew, for example, that wouldn’t really be enough for a meal, I heat it up in a saucepan with a little bit of water added, cooking a handful of orzo in it (I sometimes throw in a handful of frozen petits pois, too) to make a speedy, soothing supper.
