Cultivated in Peidmont in Northern Italy, Black Venus Rice is a naturally black, firm textured rice with a unique nutty flavour. Use as you would in any other rice dish.
"I’m a longtime fan of this robust, chewy black rice. It makes a beautifully dramatic accompaniment to a curry, and I turn to it, too, for a rice salad, favouring a zingy dressing made with soy, fish sauce, a drop of toasted sesame oil and lime juice or rice vinegar plus freshly grated ginger, finely sliced red chillies and chopped coriander. You can cook it as if it were pasta if that’s easier for you – that’s to say, in copious amounts of boiling water, before draining it – but I like to put it in a pan with double the amount of cold water (so, for 125g rice, you’d need 250ml water) then bring it to the boil, before clamping on a lid, turning the heat down to low, and leaving it to simmer for 30 minutes, by which time the rice should be cooked and the water absorbed."
